Carcassonne
Historic Fortified City of Carcassonne
Since the pre-Roman period, a fortified settlement has existed on the hill where Carcassonne now stands. In its present form it is an outstanding example of a medieval fortified town, with its massive defences encircling the castle and the surrounding buildings, its streets and its fine Gothic cathedral. Carcassonne is also of exceptional importance because of the lengthy restoration campaign undertaken by Viollet-le-Duc, one of the founders of the modern science of conservation.

Greetings all. I would like to welcome you to this culinary trip to Europe. In these next few months I will post updates on where we will be throughout our trip. Our tentative itinerary is to start in Carcassonne France for a two days. From here we will travel to Bayonne for another two night stay. This will end our time in France.
We will spend the rest of our trip in the Basque Region of Spain. The next three days will be in San Sebastián. From here we move onto Logrono for two days and finish our trip in Bilbao.
After this wonderful trip I will depart my fellow culinarian friends and travel to Belgium to visit a sister/friend for a few days. Now of course I will make sure that there will be some sort of culinary influence to post from their also.
So excited to go and can not wait for the food, wine, cheese that will pass in front of us to enjoy.
